This book for preserving meats is ok but I would try other books for this more talk in it and not much telling how to do it

I bought this book because I wanted to get away from chemicals in my meats like nitrites and nitrates but every curing recipe calls for them. I'm quite disappointed they didn't include methods we used before these chemicals were available.
