Great smaller fillet knife, classic Shun.
Great knife, classic Shun. Thin blade and length works well with smaller fish and general trimming. Sharpens easily with steel and holds edge well. Expensive, but you get what you pay for. Treat it nice and it will last for years.

Great knives, sharp & durable!!
I am a home cook who uses knives almost every day. I bought (4) of the classics: 8" kiritsuke, paring, 6" utility and 6" boning/fillet. All very sharp right out of the box. The website pictures make the handles look a little plastic, but they are not. Very nice looking knives. I bought them almost two years ago and they maintained a very sharp edge (I always use plastic cutting board and hand wash & dry). I finally had to sharpen (not hone) the boning knife a couple of months ago. I think that they are definitely worth the money.

The perfect knife for fish
This thing is just crazy sharp! I bought it to skin and debone fish and I have never had a better knife for that. It is the perfect size and fits in my hand like it was made for it.

More useful than I thought
Wasn’t sure how much I would use it but I grab it more often than I thought. For breaking down large cuts of meat, there’s nothing better. Also works great for cleaning and trimming poultry and fish.

A non flexible filet / boning knife that is worth the price.
So this was purchased for my son but it stays at my house. I have the Forschner fibrox hand filet knife that has some movement and just love it. This knife will come in handy when you don't want movement in a filet knife. As in deboning meat w/ large bones, as in a boston butt. The tip on this knive is very fine and allows you to slip under silver skin w/ great ease. A pricey purchase, but as long as you take care of it, will last you a lifetime. If you purchase expensive knives, you really should invest in a knife bar for your wall or side of your cabinet. Who wants to put knives in a drawer, certainly not when you pay this price. But all knives benefit from being put on a knife bar. The Norpro alum 19 inch is a good one. Love the older Ikea one.

Great Knife
I love these knives, knowing that I pay a bit of a premium for the aesthetic. This is well suited to a specific task of preparing cuts of meat for baptismm by fire. This would not be an introductory knife purchase, as a standard utility knife is largely capable of fulfilling the role that this knife does, but it’s a decent addition to the lineup for those who like to accessorize or ideally those with a specific need. I have not yet tried to sharpen it myself but the lifetime mail-in sharpening is nice to have available.

Wicked Sharp - Perfect for Filleting 🔪
This is a great-little filleting knife. The wicked-sharp edge, and camber of the blade makes removing fish skin (etc.) easy peasy. Awesome Shun quality. Keeps its’ edge FAR longer than any other blade. Mind its brittleness however, as it is folded steel.
