Organic, natural and chemical-free
Based on the natural malting process as used in brewing, this "Organic Malted Flour - Diastatic Malt Powder - for Baking - High Quality and Enzyme-Active - Malted Bread Flour - Additive Free - 1 kg Organic Wheat Flour" was personally proven to work time after time. It has been used for hand-made breads and dough as well as those made in a bread-maker and has provided very consistent results and improved texture and flavour in every instance. Some claim it to also improve crust colour and strength although neither is a personal observation. There is nothing to suggest that this is not a fully natural product; it is devoid of animal-derived enzymes etc and also excludes commercially-produced chemicals of any kind. Originally purchased as a much smaller pack, only the final dregs now remain. As just 5-40g per 1Kg of flour needed for any recipe is used, the 1 Kg pack could last ages. Good strong white bread flour will need an amount towards the lower end of the range, brown and mixed grain flour the higher amounts. The original recommendation came from the lead baker at a small Continental bakery who obtained it direct from a German trade supplier and there was then doubt that it could be obtained in home-user-friendly packs in the UK although they gave me a small amount as a sample and the product name. It was then found on Amazon!

Works well, a little too well.
Honestly I’ve no idea how to use this but someone recommended it in bread recipes to give my bread more lift. I can absolutely confirm this works, the bread dough became huge and more than quadrupled inside my oven, it then engulfed my kitchen, became sentient and now has a bread dough family of its own. In hindsight I shouldn’t have used so much of this as it really is very effective so to summarize a little goes a long way be careful.

I've given this a 1 for value for money
It seems to be decent quality but I've recently discovered that companies like Shipton Mill sell diastatic malt flour for about £3 per Kg... making this a bit of a rip off

Da color y esponjosidad al pan, , la miga queda crujiente y sabrosa, ideal para mejorar tu receta de pan favorito.

Se usa como mejorante da cuerpo y volumen al pan, a tener en cuenta sólo hay que poner 2 gramos por kg de harina. Aunque ahí ponga 30 ..Solo 2 son suficientes.
