I bought this griddle about three months ago and use it everyday. I like the heavy aluminum guage because so far it hasn't warped like three other cheaper griddles I have. Sometimes I use a stainless steel spatula and so far the nonstick surface (may not be Teflon) seems quite resistant to scratches. I am not careful either.I have a flat ceramic-top electric stove and it does not seem to be a problem with heating the griddle even though there is that space just below the cooking surface.I like the extra size of it over other cheaper griddles and it fits over two burners on my stove top just right. I also like that the sides are low enough that my knuckles or spatula handle don't hit as I slide and flip.I do like the trough because I can push the grease into it when I am cooking several greasy meats such as sausage and hamburger at the same time.As others have already said, the grease collection trough around the cooking surface does make it hard to cook some things like omelets and pancakes because the liquid tends to spill down into the trough. I haven't really found a solution, but I'm still evaluating my options.So far I have just been slow and careful to stop the liquids before they spill down into the trough. If anyone has found a solution for that, let me know.

Substantial and Even Heating
I switched from an electric stove to gas and wanted a good griddle I could use without a whole lot of oil or grease. After a lot of research, I decided on this griddle because it was All-Clad.Per the directions, I've been careful NOT to use Pam or any other spray oil on it. Just wiping it with an olive oil soaked paper towel or using half a teaspoon of olive oil has been enough to make it easy to cook eggs, French toast, grilled cheese sandwiches.One reviewer complained the drainage trough along the edges was a problem for them. I have not found it to be so. However, I did find out I needed to slightly level the new gas stove so oil did not run off the top into the trough. That has nothing to do with the griddle.The handles get warm but unless I have used the griddle on an exceedingly hot setting, I can hold the handles without difficulty to move the griddle over to the other side of the cooktop.This griddle is ridiculously easy to clean. Just swish some sudsy water on it, run a dishcloth over anything that is still on the surface and it comes off immediately. I've been careful not to use metal utensils on it because of potential scratching, but the surface is smooth and food comes off easily.All in all I am delighted with my griddle and certainly would buy it again if I needed to.

Kitchen work horse
I'm so glad I purchased this griddle it produces beautiful pancakes, french toast, burgers, quesadillas, veggies and more. The key is to heat up the pan on medium low heat and increase the heat when you need it. This is not ideal for a glass cook top - it works great on my viking range and will work just as well on a stove top with electric coil burners. This is the perfect housewarming and bridal shower gift. Very easy to clean, too. I would not recommend cooking meats with a very high fat content - while there is an ample lip for fat drippings, a burger made from chuck meat might be a bit messy. Otherwise I just love it!

Works Perfect on Our Electric Glass Top
I use this on an electric ceramic glass top that has a bridge between elements and it works great. I read about a million reviews on too many products before the purchase. Honestly, you just have to be patient. We let it warm up way before use and then apply a little butter or oil. Pancakes, eggs, bacon, french toast, whatever bakes evenly and never sticks. The air gap between the burners and the pan (due to the raised center portion of the pan) is not a problem and I love the grease channel all the way around. When done, resist the urge to clean right away. We just let the pan sit on the stove top until it is COMPLETELY cool and then it washes up perfectly clean and there is NO WARPING. 1 month of heavy use so far and no issues. Remember to be patient - time to warm, lightly butter the surface before cooking, time to cool. You'll be happy.

Great pan
Love this pan. Great quality. I had a cheaper one I had bought “Amazon choice” or what ever it was and it didn’t last long. This is a much better pan. Only thing I would change is the tall handles. They do get in the way on occasion, but not enough you can’t work around them.

Better Pancakes
I have used All Clad products for over 20 years and have been impressed with their performance and durability. My experience using this griddle did not disappoint! Consistent with my other All Clad items this product exhibited even heat distribution and retention, did not warp with heating or cooling, and the non stick surface worked as advertised. This is a heavy duty workhorse of a product. I consider the purchase of an All Clad product a lifetime investment. They are not inexpensive but when you consider the years of use you get out of these items the initial cost is worth it. All Clad is manufactured in Pennsylvania by people who know and care about their products. Most Americans handle All Clad products daily and don't realize it...they developed and manufacture the laminated metal used for coin production by the U. S. Mint. This technology is carried over to their the pots and pans and explains their heat distribution properties and durability. When was the last time you saw a coin de-laminate?

Very well made pan
We have other All-Clad pans that we have found to be superior to others we have had before and this one lives up to our expectations. It is very solidly made of heavy gauge metal so it won’t warp. The channel that runs around the outside of the pan is very effective for catching any grease from what you are frying (e.g. bacon) and it is easy to pour it out when you are done with the small “spouts” in the two opposite corners. The handles stick up more than some others which is a plus when you are trying to grab it with hot pads to move the pan and pour out the grease

Gas burner left scorch marks on bottom
Works well for me, no warping as of yet. Non stick is very good. A little concerned about the scorch marks on bottom. Hope this isn't a recipe for future problems. Kept burners low, have only made pancakes on it so far.
