What kind of speaker do I need to buy to plug the receiver into? My kids just want to use mics for Karoeke in the house.

The MICs aren't standalone karaoke machines.  They are actually pretty good, almost-professional wireless MICs. Depends on your karaoke source. You might be able to plug the MIC receiver into the AUX input of your karaoke machine, or the universal I/O plugin on your laptop if that is your karaoke source. I use a cheap laptop with karaoke software and songs loaded. I got a smaller ION-type battery powered unit for my assisted living residences. I got a 1/8"female to 1/4" male phone jack adapter so I could plug the receiver into the MIC input on the speaker. Works great. Hope this helps.

Can ya use these microphones in the car using the stereo speakers as the output audio via jack converter?

No, unless you have a mic "input" on your car stereo. Typically only outputs are available for car stereo. BUT if you really want to bring singing into your car, you can purchase a compact karaoke amp, power it with a converter (12V to 110V) then tie in existing car speakers ( rather complicated unless you know how, better off use a set of external compact speakers and secure them on you car wall). From this point on the hook-up is easy just like you would at home. With all of that being said, I don't think it a good idea because you will have a lot of feedback due to the enclosed space you have in the car. Got it?
