What is the difference between the Hydei and Melanogaster medias, and what is their shelf life?

Hydei media has more protein, because the hydei are bigger so they would need more, where as the melanogasters are smaller and do not require so much protein. The shelf life is over a year sealed, unsealed and stored in a fridge or freezer will get you about a year.

Does the fruit fly culture already contain methyl paraben to restrict mold growth? Or do I also need to buy a bag of that to mix in with this?

The bag is ready to use. I have never added any other ingredients and keep having successful colonies week after week.

Can I use this to make hydei fruit fly culture ?

No, the mel media should not be used for hydei as it does not have enough protein for them. However, hydei media can be used for mel

Is this just food for the flys or will this "hach" the flys

You add some live flies to a container with this food and some substrate and the flies breed and multiply
