How much water does it hold? Can it produce 12 cups of coffee and hot water for tea without adding water for each?

It is a 12 cup coffee maker and that function is completely independent of the hot water system. The hot water for the tea is added into a separate area and that probably makes 3 cups of tea but I'm sure you can check on the specific capacity from the manufacturer.

Are the water tanks stainless steel or plastic?

Not sure, but its quite likely the water tank for the hot water side is metal or partially metallic, because it has a heating element to keep it hot which is always metal.

how hot is the hot water?

One answer says the hot water temp ranges from 195-204. I wish it were so. That temp would be perfect for French press or pour over coffee methods. Boiling water (212) is necessary for a proper cup of tea. I’ve currently recorded temps between 170-190. Not sufficient for my needs. This is down from the 200 degree I used to get.
