Is this the best griddle? Is that why so expensive?

Wolf is a top tier cooking product. We have a GE Monogram range with a built-in griddle but only use the Wolf now. It's really impressive in both how well it cooks and easy to clean.

What grade stainless is it?

The cooking surface is not stainless it’s more like a Teflon type surface. The outer part is stainless and good quality. I like it and it is well built, however I do not think it should be priced this high.

Is it a double skin or insulated cover/lid? Ie, suitable for roasting?

The lid is a thin stainless cover it is vented but not insulated. It covers the grill not really a roaster.
