I Bought it for my Mercedes Sprinter van and it works well

Does it inflate paddle boards ?

I suppose what you are asking is does it have the appropriate adapter to inflate a paddle board. Not being familiar with the inlet valve to a paddle board I can neither answer yes or no. It comes with a spare fuse as well as the 3 adapters shown above in the video.

How noisy is it when running? My old pump was a lot louder than the car engine and really annoying.

It's a pump - it makes a noise - it inflated a tyre with a slow puncture - noise is of no relevance!
