It cuts bread. Properly. That’s what a bread knife should do
I have (had) a couple of okay bread knives, one of which came with a knife set. I thought they were okay until I stayed round my son’s house and tried his version of this. Brilliant. He is a sourdough man and his knife just slipped through the thick crust whereas my home version had been giving me grief and near loss of fingertips for some years so I bought this one and it’s perfect. Sharp clean cut. I bought the 20cm version but now wish maybe I had bought the slightly longer version … but it’s not a big deal. The 20cm version is good and my old bread knives went in the knife armistice bin outside my local police station.

Cuts Sourdough Brilliantly
I’m not the best judge of good bread knives as I usually spend £15 or so, and have always struggled cutting the breads I like. My partner can’t even cut them at times. I’ve always assumed that a bread knife is a bread knife, but I thought I’d venture a bit more as I’d invested in another Zwilling Pro knife that was very good. The difference from a ‘normal’ bread knife is amazing. It may not be the best bread knife in the world, but it cuts through the toughest bread with ease. Which makes it well worth the money in my book.

I have other professional S knives from Zwilling and I wasnt going to buy any other brand of knife, although expensive and if you watch it for any length of time the price fluctuates as i said I wouldnt buy any other knife.

La gente tende sempre a economizzare sul coltello da pane, ma è un errore. Per me uno dei coltelli più utili in cucina e uno dei più sottovalutati. La differenza coi modelli economici è abissale. Questo modello della Zwilling è robusto, resistente e taglia benissimo. L'impugnatura lo rende sicuro anche quando si tagliano pagnotte più dure e resistenti. Il taglio è sempre preciso e consente di fare fette anche sottili, ideali per bruschette da forno ecc. Facile da pulire. Io non posso più farne a meno.

Das Messer kam leicht verpackt an und war auch schon gut geschärft. Auf der Klinge ist deutlich zu erkennen, dass das Messer "Made in Germany" ist. Das habe ich bei der Professional S Serie aber auch noch nicht anders gesehen. Für einen Preis von unter 50 Euro erhält man hier ein solide und sehr gut ausbalanciertes Brotmesser. Ein wichtiges Merkmal ist, dass es einen deutlichen Schwerpunkt in der Mitte hat und so auch bei einer harten Kruste auch solide in der Hand liegt. Ausbalanciert kann auch ein leichtes Messer sein, aber gerade bei Messern, die auch einmal an festere Nahrungsmittel müssen ist, wie ich finde, auch ein hohes Eigengewicht gefragt. ==== Update nach 1 Jahr und 5 Monaten ==== Im Januar 2019 gekauft habe ich seit ca. einem halben Jahr Probleme mit Regenbogenfarben auf der Klinge. Gespült wird von Hand und ohne Spülmaschine, so dass hier keine Schuld zu suchen ist. Mit einer Stahlpolitur habe ich versucht das Problem zu lösen und für ca. 4 Wochen war es auch gelöst. Dann begannen die Verfärbungen sich neu zu bilden. Ich könnte hier natürlich in einen ewigen Kreislauf eintreten, aber wirklich zufrieden macht das nicht. Die anderen Messer der Serie Professional S haben das Problem nicht. Ich habe Zwilling angeschrieben und über das Problem informiert und dürfte das Messer als "unfreie Retoure" zur Überprüfung einsenden. Kurz Google befragt zeigt sich, dass mich dieses 15 Euro für den Versand kosten würde. Das muss ich mir wirklich überlegen, da das Messer außer die Verfärbung noch immer sehr gut und scharf ist, aber glücklich macht das nicht. Mit dem Zwilling Service hatte ich eigentlich bessere Erfahrungen gemacht.
