Is there a way to safely get the probe into the brew without contamination?

Yes there's a way, I made a very effective DYI thermowell with a piece of 3/8" x 20" pvc plumbing water faucet supply line by heating the straight end with a torch just to soften (not burn) and pinch the heated end quickly with a pair of locking pliers to crimp the end forming a water tight seal under $2.00

How does this compare to a seedling mat for the same purpose?

I think it would work well for many things. Mine are working well for keeping my brew warm. It would work for seedlings too or for keeping your chicks warm. Take note that the wiring where it attaches to the mat is a little bit vulnerable to breakage but if careful it will be fine. I use two of these and they work beautiful.

would this heat a small martha tent for fermentation adequately and safely?

Maybe, the FermWrap is made to raise the temp 20 degrees of room temp. It is not made to heat something in a cold environment. It depends on the room temp. I use it in the winter when my basement is in the 50's. I can put it around my fermenter and drape some towels over it and it will easily keep it at 68 degrees. Hope this helped.
