Does it set off any metal detectors like at the airport?

It might, it never has for me though and I travel a lot, but I am someone who always tells the agent before I go through, "hey I have an insulin pump!" That usually gives them enough heads up. They will still have me go through anyway and then most times they will just do the bomb threat testing (the swipe of your hands, touch your pump, etc.) But never had any issues!

I have arthritis and the case that came with the pump is hard for me to remove; is this one easier to take of?

Yes it is! I just didn't like it because I do a lot of crazy activities and I need mine practically glued to my pump haha. But yes, I can definitely see someone dealing with arthritis preferring this case over others!

I’ll attempt to answer your question but I’m not sure I understand what you’re asking. In my opinion the pump is not secure in that case. It can slip out of the opening at the top. I returned it and purchased the one from tandem where it is locked securely in the case.
