Is the grinder a "chop em to death" or a proper grinder?

Just chops them - sometimes not even in half.

Does this machine accept filter coffee as well as beans?

Yes both filter coffee and beans can go in this machine. You can switch the bean grinder off.

Ive never had a coffee machine but im looking for one that uses beans rather than the capsules is this easy enough to use ?

Yes. Very easy to use. Just be sure to set the grinder to 12 cups - no matter how many you are making or it will not grind the beans properly. If you leave it plugged in you do not have to set the timer each time. Or you can just not use the timer and plug it in and use it whenever you choose.

Do you need to put the required amount of coffee and water or, can you fill up to maximum and it does take only what's needed every time? Thank you.

What I do for 2 mugs of coffee is use 4 of the spoonful provided(if you like strongish) , and instead of looking at the measurements on the jug, I just pour in the two mugs full of water in the bit where you pour the water in, turns out perfect, Iv doing for 2 years.So how ever amount of of mugs you want I pour the mug quantity in .
