Would I be able to cut mat? My dehydrator has a hole in middle?

You can cut it with no problem but there wouldn't be a lip around the hole you cut# so your liquid contents wouldn't stop at the hole. Bad idea. Find some fruit leather trays made for your style of dehydrator.

What does a sheet with edges measure?

The inside measurements are 11.25" x 10" and the edges are each about .25" wide so overall it is 11.75" x 10.5. It looks to be about .125" (1/8") deep but I didn't measure that exactly. Hope this helps.

Does the writing come off into the food over time?

Yes, the advertisement slowly comes off the silicone. Piece by piece.

On rawnori site and on the amazon ad it says these trays are silicone, but on the comparison chart above it says they are plastic. which is it?

They are silicon. They work great. I've used them to dehydrate sauces and soupy things. The edges are very stable.
