Will this work as a router for Hubitat coordinator?

It is a hub/coordinator. I don't use hubitat, I use Home Assistant.

Is it straight forward to make a map of my zigbee network (currently set up using Alexa echo hub) with this device? any tips?

I would recommend not using the Alexa hub for your main device, I would recommend getting Home Assistant and running everything from there... it can integrate with the Amazon Echo devices.
