It is possible to amplify or equalizer the output earphones of one old tv to couple my yamaha r-s700 (3.5mm to rca connect)

You could equalize (Bass/Midrange/Treble/Loudness/Balance Control) coming in from the TV, and then output from the Pre-1 to input of your choice on the Yamaha receiver.

Are the rack ears removable?

No. AND the unit is not 1 unit high or 2 units high. It’s somewhere in the middle and as such, there will always be a space between this preamp and anything mounted above. Not a good look.
