Is the 1/8" thickness measured from the peak of the diamond or from the valleys?

Neither it seems. I just went and measured with a micrometer. The mat thickness is 0.9" where it's flat / smooth. At the peak of the diamond pattern, it is 0.130". See my review for images in my cargo van, it is quite durable.

how many rolls come in the order? In the pic it looks like two rolls per.

Luckily, our rubber flooring options are set up for DIY-style installations that make it easy for anybody to customize their flooring roll to meet their specifications. In your case, you can take a straight edge ruler with a standard utility knife and cut off 12-inches from the width in order to meet your exact specifications of 36-inch by 96-inches wide.
