This states the rollers are only 3/4 in in diameter. I need 1 in rollers. Can I buy different rollers, and from where?

I use the Caruso steam curlers (which are available in several different sizes) with this set and they work perfectly. Try the medium size, I believe they are 1" in size.

How long does it take for curls to dry and take down?

You have to touch the sponge to make sure it is saturated before you curl each curl. Place the guard onto the steam once you got your roller in place and get it hot and wet before placing it on your roller. The amount of each sectioned hair determines how curly your curl will be. If in a hurry, blow dry your rollers picking up each one and drying underneath and thru the hole on the side. When removing, make sure not to touch your hair till your hair is cooled down or dry. My curl lasts till my next wash with no hairspray. If there's a crease in the top of your hair, just use a straightener for that section only. Goodluck!
