Do I just need 1 copy for my wife and I to play?

Unfortunately, animal crossing is designed for one player, one system. You can technically have two characters on one game/system but if you play at the same time one character is kind of just wandering with the main character. You can play separately as the lead character but you are playing the same island. I have two daughters that were not happy playing like that for long. I ended up buying a separate game and a Nintendo switch lite so that each can have their own world. Plus you can play together that way at the same time and go to each other's islands. I hope this explanation is not confusing!!
