It’s big enough to change the shower head?

It depends on how big the area on the shower head you would need to grip. This wrench will grip up to about 1 inch. The teeth on the jaws of these pliers are quite sharp, and almost certain to mar the finish on a plated plumbing fixture. Bottom line, these are probably big enough but you most likely want to choose a more appropriate tool to change a shower head.

I noticed the jaw opening is one measurement and then there's a pipe cap measurement. i'm not familiar with "pipe cap". could someone please explain?

I'm not familiar either, I'm guessing maybe the cap measurement is because of the v jaw, maybe the cap measurement is larger than the jaw??

Would this be a good pair of pliers for removing a stuck round adapter from a kitchen faucet?

It's an excellent pair of slip lock pliers....i would focus on an actual pair of locking vise grips for that particular job , or a pipe wrench

What is the difference between the .8 and the 8”..???

I don’t believe they make up .8 only an 8 inch my guess is it’s a typo I have all three sizes of these that I am aware of and they work great I love the adjustability
