Does this work with Dr Pepper?

Yes and no. Dr. Pepper is bagged by multiple companies that all use different bags. It is a common misconception that Dr. Pepper is a Coke product, really they are their own company. I have personally seen Dr. Pepper use 5 different connectors, including both Coke and Pepsi. It just depends on where the bag-in-box came from. If you buy from us, Syrup Supply, our 1 gallon uses the basic black tap valve or the Grey QCD tap valve and the 2.5 and 5 gallon use just the grey QCD tap valve. If you buy elsewhere you may want to order the Dr. Pepper and see what the spout on the bag looks like. What is the easiest way to mix coke syrup with soda water, what canned water works best?

I use filtered water and Soda Stream to produce the carbonated water.  This allows one to carbonate to the level one prefers.  Many argue the cost of Soda Stream is equivalent to purchasing but without all the plastic or can waste. Others will say there is a cost saving.  Based on your approach one may ask why even buy the syrup. Might as well just buy the finished product if you plan to buy canned water. Especially if you are buying canned carbonated water why go through all the trouble.

Once the valve is connected, do you have to store the entire unit in fridge, or just room temperature?

It connect to a Bag-In-a Box, that collapses as the liquid is drained, preventing air from getting to the (example Coca Cola syrup) Refrigerate if you can,  and it will stay fresher longer, but you can leave it un-refrigerated  if the room is  not too hot. Cool basement would work well.
