In the customer comments, people are saying only seeds of certain sizes will work. What seeds do you recommend for the trays, specifically?

Only extremely large seeds will work as the holes are enormous. You could sprout beans or peas successfully or sunflower seeds? Not much works as they all fall though. Personally, I would save your money and get the mason jar toppers or something with a tray with significantly smaller holes.

Will this work for growing broccoli sprouts? Are tray holes too big for broccoli seeds?

Yes, the holes are too big for broccoli seeds. I use mung beans and it works well.

Can you actually grow greens as tall as on the picture without soil? Or is this tray just for sprouting?

YES you can! I do it all the time...you don't need soil... The try is for sprouting and growing...I keep mine in the tray until I use it all..then I start a new one...
