What is the minimum cabinet highth the shelf will work in?

Minimum Opening Height: 18-5/16 Inches.

How far away from cabinet below does this one pull down? I'm wanting to pull it down over a microwave cabinet.

It pulls out and locks in the down position over your counter top. My recollection is that it barely misses the bottom of the cabinet coming out. Not designed to pull out far from the cabinet just down for accessibility

How many dishes can it hold?

Not sure because I use mine for cooking oil and other condiments but I would guess it would at least hold service for eight.

Are the wire shelves removable from the frame?

Each wire shelf is held in place by four screws on the underside, two on each side, to brackets that project from the vertical side panels. The shelves can be removed, but the unit would then not have cross support between the vertical side pieces. I suppose the shelves could be replaced with wood shelves cut to the correct length.
