how do you un-clump the gatorade powder? Mine seems to have formed a massive hard cylinder perhaps due to moisture.

I have not been able to un-clump damp powder. The trick is to keep the moisture out, I fill a smaller container and work from that until it is empty then refill. That limits the moisture in the larger container

How long will the final prepared liquid last at room temp? I prepared 1 gallon of gatorade liquid, I left it in room temp for 5 days, still safe?

These are great for use with the 5 or 10 gallon drink coolers. No messing with a measuring cup. For home use when you're just mixing a quart or two at a time I think the standard can of powder is fine. I used these for a camping trip with over 100 thirsty people and really liked the simplicity of mixing large amounts at a time.
