Is this the red baron bottle capper by ferrari made in italy or a chinese knockoff?

The red barron capper included with the caps is made by Ferrari. They are made in Italy.

Can i use when i bottle kombucha and water kefir?

Thank you for your inquiry. Yes, you can use the bottle capper for your kombucha and water kefir. The capper uses standard beer bottle caps and bottles. They can not be the screw type bottles.

is the bell replaceable?

Yes, the bell of the capper is replaceable.

It´s possible to switch the bell to use for 29mm caps?

There does not appear to be a way to adapt this to other sizes. I do not know what a 29mm cap is compared to a standard US beer bottle cap, which is what it uses. It does work well for that purpose, and at a good price.
