The small-batch Madagascar bourbon vanilla version of McCormick's vanilla extract is a little better than their standard version. It is most noticeable in the scent of the extract — the aroma is a little sweeter and stronger with less obvious of an alcohol base. Obviously, it still contains alcohol, like all vanilla extracts. The taste is also a little smoother. I use a few drops of this in post-workout protein shakes, plain yogurt, cereal, and steamed milk and have noticed a subtly smoother, punchier flavor than the standard McCormick's vanilla extract. It isn't a big difference, but I found it noticeable. Previous versions of this product's bottle had a nice easy-pour spout, but apparently this was replaced and now it's just a plain cap like the standard vanilla extract bottle has. This is an unfortunate downgrade but not really a big deal.

I tried this because I thought it might be special because it was the Small Batch Extract.Many people giving low reviews say that the extract here tastes like it has too much alcohol, like the alcohol has too much of a concentrated taste. So, I looked it up. In order to be considered Pure Vanilla Extract, it must have a minimum of 35% alcohol by volume (ABV) (equivalent to 70 proof). The remainder of the liquid is water and 13.35 ounces of vanilla beans per gallon. So, there you have it! The companies Must put in this amount of alcohol for it to be considered an extract.And why do they use so much alcohol?The alcohol acts as a solvent drawing out the flavor from the extract.As far as the baking performance, I use this vanilla baked into chocolate cookies and it tastes good overall.The quality of the vanilla seems good. It tastes out of the bottle like a lot of alcohol mixed with vanilla extract. So, out of the bottle it doesn't taste good for sure at least to me. The reason that this is not a 5 stars review is because in my limited experience, the larger size McCormick Vanilla Extract tastes the same as this Small Batch one. So, I would have done better to simply purchase the larger size only for the cost savings.

Very good project. I used it to make homemade coffee creamer & it worked great. Tasted amazing. Great substitute under my homemade vanilla extract is finished.

Probably one of the best vanillas I've ever baked with, and I've tried expensive brands. I keep coming back to this vanilla! I would definitely recommend it.
