I'm confused. This is organic, but "raised in open barns" is not the same as free-range, right? Is that why the vitamin d is low?

Great questions! By law, all USDA certified organic pigs must be raised with access to the outdoors. All of our pigs are raised with outdoor access but they also have access to the shelter of barns. As of today, 10/15/15, Tendergrass Farms has not yet invested in laboratory nutrition analysis of our organic lard. We are a small family owned company and have not felt that we could justify the high cost of that analysis. The nutrition facts on the label are standard reference nutrition facts provided to us by the USDA and are not representative of our specific product. While these standard reference nutrition facts fulfill our legal obligation to provide nutrition facts, we do hope to have more precise nutrition facts in the future. Our pigs do get plenty of sunshine! :-)

what is the difference between this and the 2x16oz product? Is it only plastic vs glass jar?

The 2x12 set has screw on lids with plastic jars. I believe the 2X16 has plastic with snap on tub lids. I wanted screw on. Just thought the lids would last better, especially in the freezer. The product is rich. It will last longer than hydrogenated lard. Delicious!

Is this product from back fat or leaf fat?

Both! We use all of the types of fat on the pigs for this lard.
