What's the height and width?

I’m so sorry, but you will be very sorry if you purchase these. They stunk...really, an odor so awful that nothing I tried helped. I would give you the measurements but I had to throw them away. They are NOT food grade and I could not even use them in arrangements. I am not prone to these sorts of responses however I feel compelled to share. Good luck.

Is the smell too strong still? The smell reviews are from about a year ago

I don't know. It was a gift. I imagine if there were a smell it would go away after a while and/or the liner was washed.

Why are several reviewers using rice flour dust in the basket instead of flour? what are the pros/cons?

Because rice floor is gluten free. it wont absorb moisture, hence your dough wont stick to the basket while proofing. I often use semolina instead.

In ounces what size bread fits in this?

I’m not completely sure. On the other hand, at first, following a standard size sour dough bread recipe, I couldn’t imagine it fitting. It does and it works fine. I use coconut flour to “grease” the proofing basket. Be generous so the dough doesn’t stick. Afterwards I clean the fabric by brushing off the excess flour with a stiff brush
