Great Buttermilk Substitute!
As a passionate cook, Hoosier Hill Farm Buttermilk Powder has been a fantastic addition to my pantry. This high-quality powder is versatile and convenient. I can whip up delicious recipes without worrying about fresh buttermilk on hand. I’m a senior citizen, and in earlier days, I could readily purchase fresh buttermilk from the grocery store. Today, that is not the case. So, because I like fluffy pancakes and savory cornbread for family gatherings, this buttermilk powder adds that perfect tangy flavor every time. A Great Substitute for Buttermilk in the Carton
I always hated buying a quart of buttermilk for a recipe, using 1 cup or less, and the rest going to waste as I didn't have any other use for it. Then, I found this buttermilk powder and it's changed my baking and cooking for the better! When used in cake batters, the recommendation is to measure the powder and add it directly to the dry ingredients and then add the liquid (you can use water or milk - I prefer milk) to the wet ingredients. It works EXACTLY the same as liquid buttermilk in recipes both in adding the acidic factor for leavening in cake and other baked goods, and adds the buttermilk flavor to other cooking products (i.e., buttermilk dressings, etc). As it is a dry good, it is shelf stable for months on end. I transfer the powder from the original container to 1 quart mason jars with tight sealing lids. This is a MUST for bakers and cooks who don't want to waste liquid buttermilk. A++++

Very Good Product with Some Inherent Limitations
Hoosier Hill Farm Buttermilk Powder, 1 Pound is a great product if used in accordance with its inherent limitations. Advantages: It has two significant advantages over fresh buttermilk: (1) it doesn't go bad (for months after opened), and (2) one jar will last a long, long time so you need not worry about running out to make a special trip to the store. In other words, it is more convenient. In my original review I stated (as did other reviewers) that the printed directions on the label are only for making up a gallon at once. I (and they) was (were) mistaken. One SIDE of the [wrap around] FRONT label has the gallon-at-a-time instructions, but if you look at the BACK label they do have directions for making a single 8 ounce glass. One disadvantage is the consistency of the buttermilk made using this product -- it is watery (not at all creamy) and so does not result in the same fluffy pancakes as when using fresh buttermilk. In other words, using the reconstituted buttermilk powder results in very thin batter. The seller suggested making up the buttermilk the night before and keeping it in the fridge overnight; I have not tried this yet, mainly because I don't plan breakfast until morning -- breakfast being when I most often use buttermilk. However, I have added it dry (no extra liquid) to my pancake mix along with "regular" buttermilk, and it seems to make the pancakes fluffier.

Good for Baking
I love using this Buttermilk Powder when I am baking a recipe that calls for buttermilk or sour milk. it is easy to reconstitute with water.

Shelf stable, easy to use, ready when you are
I make a lot of mixes comprised of shelf stable powders such as gravies, bullions, soups, breads, ranch dressing, etc. One thing I must have on my panty shelf is buttermilk pancake mix. This powder has a myriad of other uses often giving a richer flavor to the dish over just milk. For ideas, run an internet search. This could be a valuable introduction to adding a little oomph to your favorite dishes.

Convenient, flavorful, bakeable alternative to fresh buttermilk
We find that Hoosier Hill Farm buttermilk powder produces buttermilk that works just as well in recipes as does the fresh dairy product. The flavor is likewise still there. Buttermilk powder solved the problem we had finding fresh buttermilk in small quantities. We used to purchase a small carton to use in single recipes for pancakes or cornbread, but now in our area the smallest size of fresh buttermilk available is a quart (ca. 1 liter), which is far more than needed. Rather than divide the left over buttermilk and take up freezer space by freezing small portions (then having to thaw it before mixing the batter), we now whip up buttermilk powder to provide as much (or as little) buttermilk as is needed for a particular recipe. We have discovered that a single-handed spring-action plunger style kitchen mixing tool combines the powder and water quickly and smoothly, for example in a deep bowl or a large measuring cup. The one-pound size lasts us a long time and makes it well worth the shipping cost. We can recommend Hoosier Hill Farm buttermilk powder without reservation.
