Much much better than pre-shaved bonito
Iโve been put off by the cat food aroma of pre-shaved bonito, so I bought this plus a bonito shaver. Wow, what a difference. This is sublime - subtle, rich, delicate, not salty, smells delicious. Worth the effort and expense.

Delicious! Hard as a rock!
This was my first time buying katsuobushi so I don't have anything to compare it to but this shaves into delicious curls and is a wonderful topping for a number of Japanese foods, or even just on plain rice. It should last a really long time.

It is all about flavor.
This product is FANTASTIC. I will never use that over smoked, over salted under flavored packaged stuff again. I am all for convenience but I am much more for flavor and taste. It does not take much more time (unless you are cooking for 50) to use this. Also this is far more economical to use.

Most trusted manufacturer
Ninben is one of the most popular Katsuobushi manufacturers in Japan, trusted for their high quality Katsuobushi. Iโm very happy that they sell their products through Amazon in the US. Sebushi is from the dorsal part of a bonito and less fatty, thus the soup stock made from this section tastes light. I recently started making my own Katsuobushi by shaving a stick bonito with a specialized shaver. Fresh Katsuobushi tastes so much better than packaged shaved ones.

Authentic and adds some flavor
Itโs obviously the real deal and perhaps as Iโm not using a wood planer (I shaved w/ micro plane) my pieces are not as robustly flavored. It has a nice smokiness and itโs hard like a rock. I used to make dashi to brew miso soup. It will make a more flavorful product in this application.

I bought it as my cat has lymphoma and I want him to eat. He's been eating packaged bonito flakes which he loves but decided to buy it by the block and freshly shave it for him. The block arrived and we let him smell the block when we opened the package. He followed my son to the kitchen and sat down and meowed. He happily ate the shavings. He ate several helpings. He gets his shavings daily. Happy kitty. Easily shaved with the truffle shaver. My son enjoys doing for his cat and does it at 10:00 at night if it helps to feed him. The expiration date is not until 2020 but I don't think we will have to worry about that. I haven't made dashi with it but one day I will. I have my 2nd block ready for him and have had one sent to my mother who remembers my grandma shaving it for them for them to eat fresh over the hot rice.

Umm, you need tools
I saw Joshua Weissman using this on his YouTube channel and figured I'd give it a go. If you're not going to buy the tool you see in his vid, you'll need some way to shave this thing because it is literally as solid as a piece of wood. I ended up trying my mandolin and then my OXO Good Grips veggie peeler. The peeler worked the best. You might even consider a carpenter's lathe. All of that aside, this will make the best tasting Miso soup you've ever had.

Makes perfect Cat Rice
As a fan of Midnight Diner on Netflix, Iโve become addicted to Cat Rice - a bowl of sticky rice topped with dried, smoked bonito flakes and a shake of good soya sauce - but I really coveted the expensive block of katsuobshi used by the Master in Midnight Diner rather than the commercial packets of ready cut flakes, so when I saw this I couldnโt resist it. I also invested in an authentic Japanese bonito slicer that cost an arm and a leg. The resulting Cat Rice was astonishingly delicious โฆ intense and so tasty. I will certainly buy this product again and will look forward to making dashi stock for a perfect bowl of ramen.
