Is there a way to handle delicate foods so they don't get crushed... like the pulse vacuum function?

You can immediately stop the vacuum process when vacuum packaging delicate foods. Press the SEAL Button at any time during the vacuum process to immediately stop the vacuum and begin sealing the bag. This prevents crushing delicate items such as bread, cookies and pastries.

How much would the food saver stick out if placed on a kitchen counter?

The FoodSaver is approximately 7.5 inches in depth and when plugged in around 8 inches. This would all vary depending on the depth of your kitchen counter.
