## Description

Kokuho Rose Rice, 15-Pound

Review: Most delicious rice - This is my workhorse rice. We should probably all eat more brown rice, but this is too delicious to give up. Fwiw, I prefer moister rice, and don’t love drier fluffy rice as many other people do, so this is my preferred texture. I use this as all purpose, versatile rice-as plain side dish, bedding for Asian dishes, for stroganoff & similar dishes, use for making rice pilaf & Mexican rice, & great rice porridge/jook, & when making soup for gf friends. It’s great payoff in taste just using rice cooker makes it low effort. I love the texture but my main interest is the mildly sweet taste. Good for sushi, but I rarely make it. The difference between this & other white rices is that if I have some leftover, I like it as a snack with either butter or a little teriyaki sauce, whereas I don’t like other leftover white rices as a rule. I do occasionally buy Lundberg California rice for times when I want their wild rice blend, or black of red rice-also excellent but quite pricey. I was surprised to hear some complaints about bugs-I’ve bought this for years & never had a single problem with cleanliness. The price is fair. I could probably buy it for less at local Asian groceries, but after disability, can’t beat the convenience of having ten pound bag delivered. No problem wirh delivery time or condition of product. I repeat-this rice is delicious.
Review: Rice is not rice that alters when labelled Kohoku - What can I say about the best Japanese rice ever grown in California...don't buy it? As a rice grower, buy mine? Yes, it's dear in every meaning of the word: wonderful, highly valued by me for cooking, comparatively very expensive Yeah, I would like to say all the above, as I want there to be plenty of Kohoku for mememe. It's simply the best, period, bar none, round up the herd and take it to market, it is worth every penny. We buy 120 pounds a year, minimum, so don't you DARE take mine, however. You'll love every bite. NOTE: this is NOT sushi rice, tho they grow and we buy it also.. I never knew til now we ate so much rice, as we also use jasmine, basmati and sticky in much smaller quantities. Pls also try black and red rice, they are special. Brown rice goes down harder to digest.

## Questions & Answers

**Q: Can this be used as sushi rice?**
A: This is the only rice I will use for sushi

**Q: What do you store the bag of rice in between uses?**
A: I use food grade 5 gallon bucket. I dump it out of the bag right into the bucket. If you need to you can write the cooking directions on the bucket or cut them out and tape them on or don't worry about it. Remember 1 rice 2 water bring to simmer for 15 minutes. Makes perfect rice for me done but not over cooked and nice and sticky.

**Q: If you use Kokuho Rose for making sushi, what rice to sugar to vinegar ratio do you personally use?**
A: While your rice is cooking, make your sushi vinegar. The below ingredients are for 2 cups of uncooked rice:1/4 cup rice vinegar2 tbsp sugar1 tsp saltCombine these ingredients in a small saucepan or microwave and heat them until the salt and sugar are dissolved. The idea behind the sugar is to lessen the tartness of the vinegar; the salt brings out the flavour of the vinegar while reducing the sweetness. Once your rice is cooked, place your rice in a rice-cooling bowl, for example a large casserole dish. Evenly sprinkle your sushi vinegar mix over your rice and, using a wooden spoon or spatula, mix the rice and vinegar well. (Try to avoid using metal, as it will change the flavour of the rice.) Be careful not to break the kernels of the rice or to flatten the rice or it won't have the same look and feel to it. Once it's well mixed, using a fan or a plate, fan the rice down to room temperature. By doing this, the rice will have the right glossy look while still being nice and sticky. If you don't fan it, the rice's hull won't remain as intact and kernels will break when you use it. At this point, your rice is ready to use.

**Q: What farm is this from?**
A: It does not specify which farm, just Nomura and Company. This is not their Heirloom variety that Koda produces, but a variety that they have other farms grow now.
