Over a dozen loaves and they slip out every time. I will, as a precaution in case there is a film, wipe out the pan and thoroughly dry it. I have not tried anything that is sugary, I cannot see why I would want a perfectly square of anything but a bread loaf. Take the length of the pan, divided by the thickness you want in each slice to be, and you get how many slices. Its generous size well accomodates a 1lb loaf. Heat distribution is even and all sides of the loaf will be golden brown - if your oven has hot/cold spots or heats unevenly, these must be taken into account. Even if your flour/water ratio is medium high,the compression exercised by the lid while the loaf is baking will give you a soft crumb, but the bread will still slice without falling apart. The ridges on the inside - sides, bottom and lid - hold well the greasing which is strongly suggested for ease in removing the loaf. The perforations on the bottom of the pan allow for proper ventilation. Washing with soap after use is not necessary, unless your loaf sticks and leaves residues and, even in that case, any residues will be easily removed with warm water. If there are no residues, a thorough wiping with a paper towel is all the pan will need.
