Review: Quality cookware - This behaves pretty much like other high-quality SS-clad aluminum pans. It heats up fairly quickly, cooks evenly, and the handle stays cool. It cleans easily if you deglaze properly. I've seen complaints about discoloration, but this is easily avoided by not overheating. Minor discoloration can be removed by cleaning with a light spray of 50% strength white vinegar.

**Q: Is it nonstick?**
A: It is stainless steal - there is no coating on it, you must use some sort of oil, butter, fat or something else to keep your food from sticking.

**Q: What grade stainless steel material ?**
A: The product description states Professional grade.  Not sure what that means, but can say it is very durable and works great.  We would buy this again, fortunately, we don't have to.

**Q: Is the bottom flat, or concave?**
A: Flat

**Q: Is it broiler safe?**
A: haven't tried it.

Never had a stainless frying pan. The Le Creuset is marvelous. Easy cleaning and such even heat across the pan--terrific. Cooking at half or less than the heat required on our other pans--love it!
