Whats the difference in flavors?

The light roast tastes more like chocolate. The heavier the roast, the more bitter it seems and the less you taste the chocolate flavor.

Cacao bean roasting happens at much lower temps than coffee, but like coffee the exact temp and time depends on the method used and what kind of roast you are looking for. Where coffee roasting happens at temps over 400, cacao roasting often works at temps below 325. Lots of resources on the web from people using ovens and small home coffee roasting setups.

Can this product be brewed using a pour over method.

This can be brewed using whichever method you use for brewing coffee, so that should be fine. Only thing is different methods might require more/less of the cacao to achieve the taste you want.

Is this coffee really decaffeinated?

This isn't coffee, it is 100% cacao beans that are roasted and ground similar to coffee but the taste is completely different (chocolaty). Decaffeinated coffee contains some caffeine. Crio Bru is similar in that it has practically no caffeine, but to say its 100% without caffeine would not be totally correct. When I drink this instead of coffee in the morning I actually have a more restful sleep. The vitamins and amino acids in this super food will give you a little boost of energy, but you won't experience jitters or "crash" from the boost like you would from coffee.
