I'm an elitist when it comes to smoking meats. I think liquid smoke is a charlatans, frauds, and ne'er-do-wells. No self respecting grill-master would even tolerate liquid smoke being in their house, much less a part of their preparation. It's the very essence of cheating. Well, at least, that's what I thought before I had kids. Now that it's harder to find 12-24 hours to sit around watching a firebox, I've finally broken down and bought liquid smoke. I also bought a sous-vide. What would my forefathers think of me now? Well, they'd probably think "that guy can boil himself some pretty decent ribs/pork/steaks," because a little bit of liquid smoke does a surprisingly good job of adding some smokiness to meats cooked inside. Of course, that makes sense since Colgin Liquid Smoke is literally bottled smoke. What times we live in, when you can take gaseous smoke particle and stuff them into a bottle! My only knock against the product is that it's hard for an old smokehead like me to figure out the right dosage, and there doesn't seem to be any particularly accurate guide. 8mls for a rack of ribs? Doesn't quite seems like enough. 20? Too much! There is obviously a lot of trial and error with this product (but honestly, a lot less than a real smoke would have) if you want to get it "to taste." And while I haven't ever quite been able to fully reproduce the complex blend of flavors that comes with a smoke--not least of which I think is from the lack of the smokey smell--this is a great product for busy parents who don't have the time to sit by the grill all day.

This liquid smoke is wonderfully fragrant and adds a nice smoky flavor without being overpowering. I love using it in vegetarian dishes that could use a bit of BBQ flair, and it also enhances meats beautifully. I often rub it on roasted chicken and stir it into chili and stews. It’s super convenient, especially during the winter months when I’m not quite ready to brave the Canadian cold for a BBQ.

This liquid smoke is the bomb diggity! I am addicted to using this in small amounts of a variety of my foods. It is soooooo good I can't say enough about this. I highly recommend this brand. This is the best brand out there. And the cost is amazing. It adds a certain flavor that I couldn't get without using this. Only a few drops are needed and it lasts a long time.
