These bisquettes are really great. Bradley smokers are the best ever. when smoking salmon you need to be able to smoke at low temperatures unfortunately the temperature is so low it's nearly impossible to get a good smoke without lighting chip on fire with torch. I use the chips during the last hour of the smoking process when I'm bring the temperature up on the fish which works out well with this system.
